Bamya- Tita’s famous Syrian Okra Stew Recipe


  • ½ a Lemon
  • Meat Chunks
  • Okra
  • 2 Tomatoes
  • Tomato Paste
  • Minced Garlic
  • Coriander
  • Olive Oil
  • Tomato Paste
  • 1 Spoon of Sugar
  • Basmati Rice
  • Water
  • Salt
  • Pepper


  1. Boil the meat chunks with coriander and minced garlic in a saucepan. Season with salt and pepper. 
  2. In a bowl, mix okra with 1 cup of the meat water. Cut up 2 tomatoes and place it in the bowl with minced garlic and coriander. 
  3. Cook the mixture in a separate saucepan for about 3-4 minutes and pour 2 spoons of tomato paste, ½ cup of water, ½ a lemon, 1 spoon of sugar and 1 spoon of salt. 
  4. Pour the mixture into the okra and add an additional 2 spoons of tomato paste.
  5. Stir the dish slowly and let the dish cook on a high heat for 10-20 minutes. 
  6. Serve with basmati rice and enjoy.
